Summer Pasta w/ Chicken Sausage
1 chicken sausage
7-8 cherry tomatoes
1 handful spinach or arugula
1/4 cup finely shredded Pecorino Romano
2-3 cloves chopped garlic
1 tablespoon olive oil
Short pasta (penne, shells, twists)
Boil the pasta according to the packaging.  Meanwhile cook the sausage over medium heat, chopping up into small pieces.  Once cooked through add garlic, tomatoes, olive oil and spinach.  Cook 3-4 minutes until tomatoes begin to break down and spinach wilts, then remove from heat and cover.  When finished drain pasta, keeping about 1/8 - 1/4 cup of the cooking liquid.  Combine liquid with the pecorino romano to make a cheese sauce.  Combine cheese sauce with pasta, sausage and veggies.  Season with salt and pepper and sprinkle with coarsely grated parmesan or romano.
Easy and delicious, best with fresh ingredients and imported cheese.
